Imoya VSOP Brandy

A blend of potstilled brandies, matured in oak barrels for 20, 10, eight and three years, bottled at 40% alcohol by volume. Imoya VSOP Brandy contains a golden amber colour with dried-fruit flavours, and a rich, toasted, spicy nuttiness. Imoya VSOP Brandy is full-bodied, with a lingering aftertaste.

The Chenin Blanc grapes were picked in January 2002 and the base wine had a citrus character with concentrated fruit aromas of pear, pineapple and green apple.

Hand distillation, using our gas flame-heated Prulho Potstill from the town of Cognac, started in April 2000 and the traditional double distillation process was used to retain only the 'heart' fraction.

The resultant spirit was 72% alcohol volume and this was filled into a combination of 300 litre new and 20-year-old French oak brandy barrels, with a five-year maturation contributing to the brandy's distinct characteristics.

About 2000 litres were produced with the final blending of the debut TOKARA Potstill Brandy taking placed prior to bottling in 2007 to adjust the brandy strength to 40% alcohol volume and to create a distinctive spirit with balanced flavours and a fine length of aftertaste.

The quality of these casks is exceptional as all are individually tended by our experienced team of on-site coopers, ensuring our whisky develops complex, elegantly rounded flavours with notes of fresh pear and subtle oak.

The richly layered Glenfiddich 15 Year Old single malt Scotch whisky is innovatively matured in three types of oak cask: sherry, bourbon and new oak, before being married in our unique, handcrafted Oregon pine Solera vat. Year on year, this Solera vat is never emptied but is always kept at least half full creating a deliciously harmonious and intense whisky which gets more complex and intriguing every year.

Produced in small, individually numbered batches, Glenfiddich 18 Year Old combines a touch of fruity sweetness from the Spanish Oloroso wood and an oakiness from the traditional American casks. After being married in wooden tuns for at least three months, its rich, mellow flavours come together, creating an exceptionally smooth and remarkably deep single malt Scotch whisky with notes of baked apple, spice and robust oak. Each batch is unique and is of an extraordinary quality.

This exceptional Glenfiddich 21 Year Old single malt Scotch whisky is uniquely finished for up to four months in hand-selected bourbon barrels that once contained rum from the Caribbean, infusing this rare whisky with a rich and indulgent toffee sweetness. On the nose, rich aromas of fig, fudge and hints of ripe banana combine elegantly, while on the palate complex favours of vanilla toffee and spice intermingle with warm oak and the merest hint of smoke.

Our Malt Master personally noses and tastes every Oloroso sherry and bourbon cask that goes into our 30 Year Old to ensure they possess an exquisite complexity of fragrance and flavour, an intensely time-consuming process. After handpicking each whisky, he then marries them together to achieve their final sublime harmony of sherry, fig and seductive dark chocolate.

Glenfiddich 40 Year Old is an exquisite single malt whisky created using the remnant vatting system. Each year, our Malt Master hand selects truly exceptional casks and marries them with the remnant of previous 40 year old vattings. This unique process results is a peerless single malt Scotch whisky of infinite richness and harmony.

With only 600 bottles released worldwide each year, each vatting is eagerly anticipated by connoisseurs the world over. Previous releases of this masterpiece have received numerous prestigious industry awards and it is the only whisky to ever win the industry’s two most prestigious trophies in the same year.

The quality and heritage of this whisky is reflected in the packaging. The uniquely shaped bottles, which have a thick glass base, are individually numbered, hand-signed, and encased in a luxury hand-stitched calf leather case, This luxurious package, complete with lock and key, comes with a matching leather bound book detailing the whisky’s unique history. Also included is a correspondingly numbered certificate that has been hand-signed by Peter Gordon and four of the distillery’s long-serving craftsmen, David Stewart, Don Ramsay, Eric Stephen and Dennis McBain.

Glenfiddich 40 Year Old has an ABV of 45.8%

The Glenfiddich 50 Year Old is a product of time, of 50 years spent maturing in oak casks, its complex and sensuous flavours mellowing and smoothing over the years. But the whisky also benefits from the time our craftsmen have spent looking after it, their experiences and traditions passed down over 120 years.

Unveiled by Peter Grant Gordon at The Glenfiddich Distillery in July 2009, Glenfiddich 50 Year Old is not just a part of our history; it is our history. The first vatting was created from just nine casks, laid down between 1937 and 1939, one for each of our founder, Willliam Grant’s children, who helped their father build The Glenfiddich Distillery by hand in 1886. This is only the second ever vatting of Glenfiddich 50 Year is a pale gold colour and has an astonishing taste. It has a well-balanced nose, with a pleasantly sweet woody aroma which progresses to a smooth sweet fruity flavored.

THAI ICED TEA WITH STAR ANISE
Who could resist this refreshing drink? The recipe is adapted from Aliza Green's Field Guide to Herbs & Spices. Serves 6.

1 star anise
1 tsp orange blossom water
1 vanilla bean
Pinch each of ground clove and ground cinnamon
1/2 cup Chinese black tea leaves
1 cup sugar
Few drops red food coloring (optional)
Half-and-half or sweetened condensed milk

Bring 1/2 gallon of cold water to a boil in a saucepan. Add star anise, orange blossom water, vanilla bean, clove, cinnamon, and black tea. Boil for 3-5 minutes, stirring occasionally. Remove from heat and stir in sugar and food coloring (optional, but traditional). Cover, and steep until the tea is tepid. Fill tall glasses at least halfway with crushed ice. Strain the tea and pour over the ice. Top each glass with half-and-half or sweetened condensed milk.
